Xinheng Handmade Noodles is an old shop in Pingzhou; I think it’s been around for almost 10 years. I used to order delivery from them, but today I happened to pass by the store, so I went in for a bowl.
This shop is run by an elderly couple, probably in their fifties or sixties. The place has no fancy decoration and relies little on marketing—it’s a very simple, unpretentious shop. But their noodles are truly distinctive, with a very chewy texture. They’re not the common Cantonese lye water noodles, nor are they like bamboo pole noodles; instead, they resemble Zhenjiang pot cover noodles—springy and chewy, quite unique.
Today I ordered a bowl of pork stomach soup noodles and added a 5 RMB meat patty, totaling 22 RMB. The pork stomach soup noodles were comforting, with a clean and refreshing broth. The noodles were very filling, and I ended up quite satisfied.
For a small shop like this, with little publicity or marketing, to survive in Pingzhou for so many years, it must have real skill. If you’re passing by and want a solid bowl of handmade noodles, give it a try—basically no risk of disappointment.
