Today at noon, I tried a new shop I had passed by before. It specializes in charcoal stove braised pig trotter rice. This cooking method is quite novel. I’ve eaten pig trotter rice many times, but it’s rare to see it braised in a charcoal stove. Food slowly braised over charcoal fire feels more rustic and has a traditional old flavor, so I came specifically to try it.

I ordered a combo of pig trotter and large intestine with rice, which cost 20 yuan. Overall, the value for money was acceptable. The portion was moderate—not too much, but enough to eat. The texture of the pig trotter was a plus—it was braised until soft and sticky, with a noticeable gelatinous feel. It had that thick, slow-braised flavor, and the taste was consistent.

However, the large intestine was a bit lacking. The ingredient itself was fresh, with no off-flavors, and it was cleanly handled, but it wasn’t braised enough to be fully flavorful. The aroma hadn’t fully penetrated. If they could braise the large intestine a bit longer, the overall dish would be more complete.

The dining environment was relatively small, and the shop’s location wasn’t very conspicuous. First-timers might need to search a bit. But the taste was overall acceptable. I would give it 85 out of 100.

There are really too many shops selling pig trotter rice on Yuqi Street, and the competition is fierce. As a daily meal for workers, it’s not easy to make pig trotter rice stand out. I hope these small shops that cook seriously can survive. If you’re interested, you can give it a try, especially if you want to experience the charcoal stove braised pig trotter.
